3 nourishing, delicious soup recipes for chilly weather

Yes, the colder weather is definitely here...

Get the big pot out, it’s time for soups and stews and I’m all about it

Here are some of my fave soup recipes that I’ve created over the years. These recipes alone would give you dinners for an entire week if you wanted.

Soups are also super cost effective because you can use up any of those old veggies and herbs in the fridge, buy cheaper cuts of meat and slow cook them, top up the protein with legumes and add comforting carbs in the form of potato and pasta.

Enjoy!

Mushroom and Parsnip Soup

Maybe not the most appealing colour but what it lacks in aesthetics it makes up for in flavour. Earthy and grounding deliciousness

Thai Pumpkin and Capsicum Soup

We've had a pretty epic harvest of pumpkin from our garden and this also happens to be middle Childs absolute fave dinner so it has already been heavily on repeat to avoid dinnertime meltdowns (I know you know what I'm talking about)

 Slow Cooker Mexican Soup

I love the simplicity of this one. Put it all in the slow cooker and forget about it until dinner and it's super versatile for leftovers. Think tacos, wraps, salads...
