This is a simple salad to get you ready for the change of seasons and start dreaming of the brighter, warm evenings that come with Summer.
I love fruit in salads. Especially when paired with salty feta. Yum! This salad would also work really well with peaches or pears if you can’t get your hands on some juicy nectarines. I do try to shop in season so check what you have available and get creative.
You can double the dressing recipe and use it throughout the week on any other salads or veggies you put together. Its light and zesty and perfect for the warmer weather.
If you want to make it a big main meal, cooked chicken or salmon would work really well or use it as a side salad to either of these.

Nectarine and Kale Salad with Ginger and Lime Dressing
4 main size serves
GF, DF, paleo, vegan, RSF
Prep time + tidy up: 15 mins
Cook time: 20 mins
Kale and Nectarine Salad
1 bunch kale, washed and stems removed
2 cups spinach
2 nectarines, cut into segments
2 zucchinis, prepared into ribbons or spiralised
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup Danish feta, optional
Lime and Ginger Dressing
1/2 cup olive oil
2 tbsp apple cider vinegar
1 tsp raw honey
Juice and zest of 1 lime
1 tsp ginger, minced
Pinch of salt and black pepper
Put all the ingredients for the dressing into a jar and shake to combine. Taste and adjust seasoning to your liking.
Tear up the kale into small pieces and add to a large bowl. Drizzle with a little olive oil and a sprinkle of salt and spend a few minutes massaging until the kale starts to soften.
Add the remaining salad ingredients into the large bowl and gently mix well.
Drizzle with the dressing and mix again.
Top with extra seeds, feta and more dressing to serve.
