Sweet Potato Chocolate Waffles with Dasha of The Peckish Girl

Sweet Potato Chocolate Waffles
Makes one large waffle or two smaller waffles
GF, DF, RSF, Paleo, Vegan
For the waffles:
1 cup finely grated sweet potato
2 tbsp coconut flour
2 tbsp tapioca starch
6 tbsp coconut cream
For the topping:
Fresh fruit
Coconut Yoghurt
Chocolate beetroot drizzle (2 tbsp coconut cream mixed with 1 tsp Naked Paleo Beetroot Cacao Mylk Infusion)
Method:
Mix all the ingredients together. I don't use any sweetener as all the ingredients used are naturally sweet. However, feel free to add a little bit of sweetener of your choice if you'd like the waffles sweeter. For example, honey, maple syrup or coconut sugar.
Spread the mixture evenly in a greased waffle maker and make the waffles as per usual. Just be careful, the mixture cooks a bit faster than a classic waffle. The mixture makes one big waffle or 2 small ones.
Once ready garnish the waffle with your favourite toppings. I suggest some coconut yoghurt, strawberries and banana, all drizzled with the chocolate drizzle.
